Quiche 101

DSC_9859Knowing what Quiche is helps with this no-fail recipe every time.

Quiche is an egg custard filled with any combination of savoury items that include vegetables, herbs, and meats.  Don’t let the word custard scare you. Eggs + cream =  custard.

Oh yes, the crust… It’s important too, but don’t worry.. Here is my Pie/tart crust recipe with step by step pictures to show you the way.

You can also just coat your tart pan or pie pan with butter and go crustless, especially if you are looking for a gluten free option.

Quiche 101

  • Servings: 6-8

Ingredients for Custard:  Baking Temp: 350°

(Enough filling to fill a 9″ pie shell sized crust – double the custard for a larger tart pan)

  • 4 large eggs
  • 1 1/4 cup (10 oz) half & half, or cream, or milk or a combination of all
  • 1/2 tsp salt
  • pinch of pepper
  • pinch of nutmeg
  • 4 oz (1 cup, 100 grams) of shredded mozzarella, cheddar, swiss, Gruyère,  feta or goat cheese)
  • 1/4 cup (1 oz, 25 grams) of parmesan cheese
  • 1- 9″inch Pie/tart dough crust chilled

Use any of your favourite combinations of herbs, vegetables, and pre-cooked meats.

Kale (or Spinach) & Mushroom Quiche

  • 1/4 cup chopped  onions
  • 1/2 cup mushrooms
  • 1-1/2 cups fresh Kale or spinach
  • Saute in 1 Tbsp of Olive oil over medium to high heat for 3-4 minutes.  Set aside
  • Optional* 2 Tbsp of chopped chives, cilantro, basil or parsley

Margarita Quiche

  • 3 small Roma tomatoes sliced into 1/4″ slices
  • 8-10 large basil leaves finely chopped

Add 6 slices of chopped pre-cooked bacon to make a BLT Quiche

Swiss chard & Ham Quiche

  • 1 cup of chopped swiss chard
  • 1/2 cup of chopped onion
  • 1- 1/4 cup cubed cooked ham
  • 2 tbsp of chopped parsley

Saute all ingredients in oil before adding to custard

Bacon and Onion (Quiche Lorraine)

  • 1 cup thinly sliced onion
  • 8-10 strips of bacon,  or 1 cup or cooked pancetta, ham, or prosciutto

Saute the bacon over medium/high heat until golden.  Remove from the pan and set aside.  Add the onions and saute until soft.

Broccoli and Cheese Quiche

  • 1/2 cup onion finely chopped
  • 1-1/2 cup steamed broccoli florets cut in small bite sized pieces

Steam the broccoli while sauteing the onion the onion in a tsp of oil.  I like using sharp cheddar with this version

Smoked Salmon and Onion Quiche

  • 1 cup thin sliced red onion
  • 4 oz of Cream cheese to replace half of the cheese in custard recipe
  • 1/4 cup of Capers  for topping off each slice of Quiche
  • 1 cup of hot or cold smoked salmon divided for the top of each slice

Add the red onion to the bottom of the prepared pie crust.  Cover with the custard and small 1/2 tsp dollops of cream cheese into custard.

Start by preheating the oven to 350°.  Prepare the pie crust.

DSC_9798Season with pepperDSC_9799Add the saltDSC_9800The nutmeg.  I’m using a whole nutmeg that I grate with a microplane grater.  I find that the freshness of the nutmeg is super fragrant.  DSC_9806Add the grated cheese, and the desired filling ingredients that have been pre cooked and pre-prepared .DSC_9808 Stir gently to combine.  Pour into a chilled pie crust, or tart crust.  Go crust free by pouring into a buttered tart or pie pan.  Place the quiche on a baking sheet and place into 350° preheated oven and bake for 35-40 minutes.  DSC_9818To make individual mini quiches with a crust or crust-free in buttered ramekins
DSC_9822Bake until golden and puffy in the middle about bake for 20 minutes.DSC_9839The quiche is ready when it is golden brown and there is a slight jiggle in the center when shaken.  Also if you insert a knife in the center it comes out clean.  The quiche should rest for 10 minutes once out of the oven before serving.DSC_9169 When making the tomato basil quiche I like to spread the tomatoes in the crust.  This makes sure I get even amounts of tomatoes in each slice.
DSC_9181Grate some more parmesan cheese and gently pour the custard and the chopped basil over the tomatoes
