Mock Stock – Plant-Based Chicken stock substitute

If you’re like me, you might not be a fan of some of the plant-based stocks available on the market. As someone who once used chicken stock in soups and meals, I missed the taste it provided. Before transitioning to a plant-based diet, I used to make my own chicken stock from scratch. But now, I’ve developed a spice blend that gives a similar taste to those soups and meals that once relied on chicken stock.

Introducing my Mock Stock recipe, a plant-based homemade chicken stock substitute that will elevate your soups and meals to a whole new level. With just a few simple ingredients, this recipe is easy to prepare and can be stored in a dry, airtight container for later use.

Mock Stock

  • Servings: 12-16

Mock Stock (replacement for Chicken stock)

  • 1/2  cup Nutritional Yeast Flakes
  • 1  1/2 Tbs Onion Powder
  • 1  1/2 tsp Sea Salt
  • 1  1/2 tsp Cane Sugar
  • 1  1/2 tsp Garlic Powder
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Sage
  • 1/2 tsp Paprika
  • 1/4 tsp Turmeric

Instructions:

  1. Blend all the ingredients in a dry blender or food processor until powdery.
  2. Store the mixture in a dry, airtight container.
  3. Use 1 level teaspoon per cup of boiling water.Yield: 1 1/2 cups of bouillon powder
