Cream Cheese Icing

20131126-200551Cream Cheese Icing is much easier to make than you may have thought.  I love this recipe on carrot, pumpkin or apple muffins, cupcakes or cakes!  If you love cream cheese you will love this smooth icing with a sweet buttery smooth cream cheese taste.

  • 1/2 cup (4 ounces) unsalted butter (softened)
  • 1 cup (8 ounces) cream cheese (softened)
  • 2 -1/2 cups icing sugar (sifted)
  • 1 tsp vanilla extract

In a medium-sized bowl or the bowl of a stand mixer beat butter until creamy and soft.  Add the cream cheese and whip into the butter.  Slowly add the sifted icing sugar  1/2 cup at a time and mix in until well combined.

Add the vanilla and mix until completely combined.  Refrigerate until ready to use.
