Pistachio Butter Truffles

To make these delicious truffles use my recipe for Pistachio butter cups.  For the holidays change it up a bit and add 1 cup of melted white chocolate to the recipe.  Talk about a delicious truffle. Make sure to refrigerate the filling for 30 minutes or until set enough to roll out like my Chicken bone truffle recipe. Once prepared follow these quick and easy steps.  DSC_2896Prepared pistachio butter mixDSC_2914Take a scoopDSC_2916 Quickly roll to a ball shape between the palm of your hands.DSC_2932Drop the ball in the chocolate fillingDSC_2940Drop in place on a parchment covered baking sheet.  Drizzle with the remaining chocolate on your spoon to add a few decorative chocolate swirls to the top

Add a pistachio to the top, chill until chocolate is set.  Store in an airtight container for up to 3 weeks for best freshness.
