Chocolate Peanut Butter Marshmallow Squares

DSC_6048Chocolate Peanut Butter Marshmallow squares is something my Nanny Lindsay always made during the holidays.  I loved these as a young girl and learned how to make them with her.

Chocolate Peanut Butter Marshmallow Squares

These treats are fun and easy to prepare for your little chefs.  The chocolate and peanut butter mix together to a creamy fudge texture.  The nuts and the marshmallows add the crunch and chewiness.  Place these are on a cookie tray and there won’t be one left over. Of course like any recipe you can make substitutions.  The peanut butter can be substituted with another nut butter or left out completely (If you leave out the nut butter add an extra teaspoon of cream).  If you don’t like walnuts, replace with another nut or add chopped graham crackers, cookie pieces, candies, caramel bits, or chocolate chips.  Replace the chocolate chips for butterscotch or white chocolate chips.  Use your imagination the combinations are endless.

Ingredients:

  • 12 oz pkg semi sweet chocolate chips (1-1/2 cups) (butterscotch chips for a non chocolate version)
  • 1/4 cup butter (1 tsp extra for buttering the 9×13 pan)
  • 1 cup peanut butter
  • 2 tsp cream
  • 1 tsp vanilla
  • 1 bag mini marshmallows
  • 1/2 cup chopped walnuts (optional)

DSC_5698Pre-measure all ingredientsDSC_5727Place a medium-sized glass bowl over a saucepan with a couple of inches of water.  Add the butter.

DSC_5732Add the chocolate chips or chunksDSC_5734Over medium heat stir the chocolate and butter until it is melted. DSC_5737Add the peanut butterDSC_5738Add the cream and stir until combined.  Don’t let the chocolate mixture too hot otherwise the marshmallows will start to melt.DSC_5742Butter the 9×13 pan and set aside DSC_5744Add the chopped walnuts and stir to combineDSC_5749Place the bag of marshmallows in a large bowl DSC_5756Pour the chocolate mixture over the marshmallowsDSC_5759Gently mix until all the marshmallows are covered evenly DSC_5766Pour the mixture into the butter pan.DSC_5771Using a spatula press into the pan gently until evenly distributed.  Cover with plastic wrap and place in the refrigerator to set.  After 1 hour cut into serving sized pieces and enjoy.  For storage place in a covered container and store in a cool pantry or refrigerator.
